This version of palak sabzi usually my mom prepares, its very healthy, quick and simplest recipe fully loaded with nutrients. Palak sabzi tastes great when served with hot chapatis.I also give this to my little son along with rice and ghee, when preparing for kids we can reduce the amount of chilli that we are adding. As we are adding moong dal, it will accomplish the protein content that is required in kids diet.
Procedure:
1. Wash moong dal and soak it for 1-2 hours.
2. Wash spinach and chop it finely.
3. Heat oil in a pan on medium flame, when heated add cumin seeds, chopped ginger, garlic and green chilli. Sauté for few seconds.
4. Add chopped spinach, soaked moong dal, turmeric powder and finally salt. Mix well.
5. Fry this for around 8-10 mins until spinach completely gets cooked and gets reduced in size. Give a stir in between.
6. Serve this with roti/chapati.

Notes:
- You can also use dried red chilli instead of green chilli. If rpeparing for kids need not add chilli.
