Sabudana Kheer is a simple rich dessert which requires less time for the preparation provided you already have the soaked the sago/sabudana :) During fasting days we find various ways to fill our stomach and try finding various options in the so called fasting food and end up eating more :) So for such experiments Sabudana Kheer is an option for people who have sugar cravings. I added color to the kheer you can skip if you do not like.
Sabudana/Sago - 1 cup
Sugar - 5 tsps
Milk - 2 cups
Cardamom powder - 1/8 tsp
Food color - pinch of (optional)
Crushed almonds & cashew nuts - 1 tbsp
Procedure:
1. Wash the sago and soak it for overnight.
2. In a heavy bottomed pan bring milk to boil. Add sugar, cardamom powder and give a stir.
3. Keep stirring until milk reduces in size and becomes thick.
4. Add Sabudana and stir well.
5. Add crushed nuts and mix well.
6. Add color if required.
7. This can be served either hot / refrigerate it and server it chilled!
Notes:
- Adjust the qunatiry of sugar based on your need.
- You can also add saffron strands to give a rich color and flavour.
