Palak/Spinach is very common easily available green vegetable and can be used in many ways in our cuisine in many forms like rice, salad, paratha, side dish, soup, dal etc.. I have already shared the recipe for Palak Thepla where I cook the spinach before adding it to the flour while preparing dough. Whilst this paratha can be prepared with minimal ingredients on a busy day in a less time. As I say always, if you are mastered in rolling the chapatis you can make paratha out fo anything! Lets go though the procedure.
Ingredients:
Wheat flour - 2 cups
Spinach - 1 bunch / 1 cup chopped
salt - To taste
Oil - For kneading the dough and toasting.
Green chili - 1 - 2 finely chopped
Ginger garlic paste - 1 tsp
Ajwain - 1/4 tsp (optional)
Cumin powder - 1/4 tsp.
Water - as needed
Procedure:
1. Clean the Spinach and wash it thoroughly and chop it roughly.
2. In a blender add the spinach with little water and blend this to a smooth puree.
3. In a mixing bowl add dough, sprinkle salt. Add finely chopped green chili.
4. Add ginger garlic paste, ajwain, cumin powder, spinach puree and mix this well.
5. Add little water, knead this to a smooth dough by adding 2-3 tsps of oil and allow this to rest for around 10-15mins.
6. Take small round balls of dough and spread it like chapati.
7. Heat frying pan, sprinkle little oil and toast the spread parathas.
