Chocolate Coconut Rolls

Chocolate Rolls!!! with coconut filling tastes heavenly delicious. I always try to make simpler dishes requiring less effort easy yet healthier in a way for my lil one. This is not so healthy we can say, but once in a while we can go for it. It is also a good option as a quick dessert for the guests at your home :). This is No Bake No cook recipe, can be prepared within 15-20 mins and requires around 30 mins to get set with minimal number of ingredients easliy available at home. My kido loved it a lot!, in fact I was facing difficulty in taking the pics as he was grabbing the pieces behind :) Lets go through the procedure.



Ingredients:
For the Roll:
Biscuits - any biscuit marie/parle - 14-15 pieces
Chocolate syrup - 2 tbsp
Powdered Sugar - 3 tsp
Milk - 1 tbsp
Ghee / butter - 1/2 tbsp
Cocoa powder - 1tsp

For the filling:
Dessicated coconut - 1 cup
Powedered sugar - 1 tsp
Cardamom powder - 1 tsp
Milk - 1/2 tbsp
Ghee / butter - 1/2 tbsp


Procedure:
1. Crush the biscuits in grinder to a smooth powder. In a bowl add crushed biscuit powder, cocoa powder  and sugar.

2. I am preparing the sugar syrup using double boiler method below, if you have syrup you can directly use it. Add the chocolate syrup to to the mixing bowl and mix everything well.

3. Add milk little at a time and mix well. Knead this to a smooth dough. Keep it aside.

4. In another mixing bowl add dessicated coconut, sugar, cardamom powder, ghee little milk and mix well.

5. Spread the biscuit dough into elongated shape like roti. Spread coconut filling evenly over the spread dough.

6. Roll the dough along with the filling to form a roll. Seal the ends and in case if the roti breaks in between you can seal it by slightly pressing by applying ghee on your palm. Be gentle in rolling.
7. Wrap this in aluminimfoil / a plastic bag and keep in in refrigerator for it to get set for around 30-40 mins.
8. Chop this roll to slices and server with chocolate syrup.



Notes:
  • If you do not have chocolate syrup, then you can melt the chocolates with the help of double boiler method and use it.
  • You can adjust the quantity of sugar according to your taste.
