Ghee rice is one of the quick recipe and a best option for one pot meal. It's always good for kids, addition of cashew nuts, ground nuts and raisins makes it even more tastier and healthier. This is the most simplest yet flavorful rice with pleasant fragrance. This rice is prepared by sauting the spices like bay leaf, clove, cinnamon, star anise along with green chilli and onions in ghee. This can also be a quick lunch box recipe on a busy day for all the working women.Lets see the procedure for it.
Ingredients:
Rice - 1 1/2 cup
Ghee - 1 1/2 tbsp
Cumin seeds - 1 tsp
Mustard seeds - 1 tsp
Green chilli - 2 sliced
Onion - 1 finely sliced
Cinnamon - 2 sticks
Bay leaf - 2
Cloves - 5-6
Cashew nuts - 1 tbsp
Raisins - 1/2 tbsp
Procedure:
1. Wash rice thoroughly and soak it for around 10 mins.
2. In a pressure cooker fry raisins, cashew nuts in half a table spoon of ghee until golden brown and keep a side.
3. Add the remaining ghee to the cooker. Add mustard and cumin seeds, sliced green chilli and all the spices like cloves, cinaamon, bay leaf.
4. Add onions and saute until translucent. Add salt as required and saute for few mins.
5. Drain water from rice and add soaked rice to the cooker. Mix well and saute for few mins.
6. Add water and close the cooker lid. Let it get cooked until it releases 3 whistels.
7. Mix the fried raisins and nuts to the cooked rice.
Serve hot with plain dal.
