Methi Pulao

Methi rice/ fenugreek Pulao is an healthy option for one pot meal. We already know how useful the methi is and also different ways of using it in our day to day life like preparing methi sabzi, methi paratha, methi dal and thepla. This is a very quick and different option for the surprise guests that you can offer at your home :) I add lemon juce and sugar for balancing the bitter taste of methi. I also add potatoes, onion and groundnut, you can add vegges of your choice like tomato, green peas etc.


Ingredients:
Oil - 2 tbsp
cumin seeds - 1 tsp
Mustard seeds - 1 tsp
Green chilli - 2 roughly chopped
Onion - 1 chopped
Potato - 1 chopped
Groundnut - handful of
Fenugreek/methi leaves - 1 cup finely chopped
Rice - 1 cup
Water - 2 1/2 cups
Lime juice -1  tsp
Sugar - 3/4 tsp
Salt - as required
Ginger garlic paste - 1 tsp

Procedure:
1. Wash fenugreek leaves thoroughly and chop them finely.
2. Chop onion and potato. Wash rice and soak it in water.
3. In a pressure cooker  heat oil on medium flame, when heated add the cumin seeds, mustard seeds. When it crackles add chopped green chlli, ginger garlic paste, ground nut saute for few seconds.
4. Add sliced onion, turmeric powder and saute until translucent.
5. Add chopped potatoes, chopped methi and saute for few mins.
6. Add rice, sugar, lemon juice salt and mix well.
7. Add water, mix well and close the lid.
8. Let this get cooked well upto 3 whistels.
9. Serve this hot with curd / cucumber raita.
Notes:
  • Adding sugar and lemon juce balances the bitter taste of methi.
  • You can also add other veggies while cooking like carrots, peas, tomatoes etc.. 
  • You can also use mango powder in stead of lemon juice.
