Kothimbir Mutka / Vadi

Coriander is called as Kothimbir in Marathi. Coriander can also be used to prepare recipes other than for garnishing. Coriander is said to be good for cleaning skin disorders and mouth ulcers.
     Kothimbir vadi /mutka is the most healthiest recipe that can be prepared out of coriander, it’s typical snacks of Maharashtra. This recipe was taught to me by my sister when I had been to my native for the holidays. She lives in core Maharashtra region (Nasik) and knows lot about cooking, I still have to learn many more things from her
 

Ingredients:
Coriander
1 cup finely chopped
Green chilies
2
Garlic
4 flakes
Ginger
Half inch piece
Cumin seeds
1/2 tea spoon
Wheat flour
½ cup
Gram flour
½ cup
Jowar flour
½ cup
Salt
To taste
Oil
5 table spoon

Procedure:
  1. First wash coriander leaves and chop it into small pieces.
  2. Grind green chilli, ginger, garlic, cumin seeds finely and add this to the chopped coriander.
  3. Then add the wheat flour,gram flour and jowar flour one by one with pinch of salt and mix everything well so that it becomes a thick dough. Make sure that you need not add more water into this. Add small amount if needed.
  4. Make small balls/ or take small amount of dough and press it in the fist, the shape that is formed is called as 'mutka' in marathi and hence the kothimbir mutka name. 
  5. Heat oil in a pan on a medium flame, when the oil is heated, slowly add the mutka and fry until the color of the mutka is changed to golden brown.
  6. You can serve this with Tomato ketchup / curs.
