Instant Carrot Dosa

Carrot is the healthiest vegetable, can be used in varieties of dishes like dosa, paratha, sabzi, salad, rice, kheer etc.. given a tadka to the grated carrots can make it a quick koshimbhir. I use carrots in as many possible dishes like adding it to normal chapati, raw carrots salad, koshimbhir, dosa etc.. Here I am going to explain the easier way of preparing instant dosa using carrots. This can be a quick breakfast option on a lazy weekend morning. You need a nonstick pan for this.



Ingredients:
Fine Rava / Semolina -  1 cup
Wheat flour - 1/2 cup
All purpose flour / maida - 1/4 cup
Grated carrots - 3/4 cup
Onion - 1 big finely chopped
Cumin - 1 tsp
Curd - 2 tbsp
Water - 1 glass
Curry leaves - 1 strand
Salt - as per taste
Oil - For toasting

Procedure:
1. In a mixing bowl add rava, wheat flour and maida. Add curd, salt, cumin, chopped curry leaves and water. Mix these all well and break the lumps.

2. Keep this for rest around 4-5 mins. Add finely chopped onion and grated carrot.Mix well.
3. Heat non stick pan on a high flame, apply oil on the pan.
4. When the pan is hot slowly pour the batter spreading it on all the sides.
5. Apply little oil on top again. Heat the dosa on medium low flame. It takes some time around 4-5 mins to toast these dosas.

6. Flip the dosa on other side and toast this on high flame for around 1 min.
7. Serve this hot with any of the chutneys.

Notes:
  • There is a technique used in toasting the dosa. First while pouring the batter the flame should be high and pan should be hot. While heating dosa the flame should be medium low. Once you flip you can make the flame high again and take out dosa.
  • You can also add finely chopped coriander to this.
  • Adjust the quantity of water, the batter should not be too thick nor thin.
