Mango Rice! I never had it before. It's only after coming to Bangalore I came to know about Mango rice from one of my neighbor who is from near by place. Whenever we meet we usually discuss about food. I like to collect information about many traditional recipes from her, so I keep asking her about the recipes and she explains me very well. In some ways I like the south Karnataka food, they use coconut & tamarind in almost recipes. The "Gojju" is very common here, mix it with rice and serve it. I have learned to prepare capsicum gojju, puliyogare, coconut rice, mango rice all from her. For Puliyogare I have already shared the recipe in the initial days. When it's mango season lets go through the mango rice recipe procedure first.
Ingredients:
Cooked rice : 1.5 cups
Raw Mango - 1 peeled and grated
Oil : 2 tbsp
Mustard seeds - 1 tsp
Cumin seeds - 1tsp
Turmeric powder - 1/4 tsp
Salt - as required
Sugar - 1/4 tsp
Asafoetida / hing - pinch of
Onion - 1 finely sliced
red chili - 2-3
Green chili - 1 roughly chopped
Curry leaves - 2 sprig around 15
Bengal gram dal - 1/4 tbsp
Urad dal - 1/4 tbsp
Peanuts - 1 tbsp
Coriander - For garnishing
Procedure:
1. This rice can be prepared from left over white rice / you can prepare white rice and spread over the plate when its done for cooling.
2. Meanwhile peel the raw mango and grate.
3. In a heavy bottomed pan add oil, add bengal gram urad dal. When the dal slightly changes in color add cumin seeds, mustard seeds and curry leaves, green chili and red chili, asafoetida.
4. Add finely sliced onion Saute for few mins until onion turns translucent. Add turmeric powder, salt, pinch of sugar and mix well.
5. Add the grated mango mix all the ingredients well. I added peanuts at the end as they were already roasted. You can add initially when you add the bengal gram if you have raw ones. Saute for 3-4 mins.
6. Add cooked rice and mix well.Saute for 2-3 mins and switch off the flame. Add chopped coriander for garnishing.
Notes:
- Adding onion is optional, you can skip if you do not like.
- If the mango is too tangy you can wash it after you grate and squeeze all the water from it.
